Hasley Cellars selects the finest grapes from the Paso Robles AVA to produce full bodied red wines. Our relationship with vineyard owners ensures that our grapes come from vineyards with low yields and small berries producing outstanding fruit. All our fruit is hand harvested and we employ the gentlest processing in producing our wines.
The wines are fermented in small lots, aged in French oak barrels for a minimum of eighteen months, then allowed to bottle age for nine or more months until the wine is ready for release. The wines are not filtered or fined, as we believe that filtering removes positive characteristics in the wine. Unfiltered wines may have some sediment in the bottle or on the cork.
The finished wine is assembled by our winemaker into a unique blend each vintage to produce the richest possible wine. The percentage of each varietal changes annually depending upon the make up of the blend. Our current release is made up of Cabernet Sauvignon and Merlot.
